Ingredients:
- Sattu (roasted gram flour)
- Wheat flour (atta)
- Onion – finely chopped
- Fresh coriander – finely chopped
- Lemon juice
- Mangrail
- Ajwain (carom seeds)
- Salt
- Garlic and green chilli – finely chopped
- Mustard oil
- Olive oil
- Water
How to make Tasty Sattu ki Baati
Sattu Filling Preparation:
- Take Sattu in a container and put finely chopped onion,coriander leaves, garlic and green chillies into it.
- Now add a little mangrail and ajwain to it.Add salt and 3-4 teaspoon mustard oil.
- Mix well all the ingredients.
- Now add water slowly to the mixture and mix properly with hands to give it a semi-dry texture. Do not put excess water.
- To check if filling is ready,try to make laddo ,if it binds then our sattu filling is ready.
- Put a lid and Let it settle down for 5-10 minutes.
Dough Preparation:
- Take wheat flour and put some salt & olive oil to it. Mix well.
- Knead the wheat flour by adding water to it slowly.
- Do not make it very hard or soft. The dough must be of medium consistency.
- Put the dough aside to settle down for 10 minutes.
Sattu Balls Preparation:
- Take dough and divide into small portions of balls.
- Now with hands take one ball and make it into a bowl shape such that we can fill our sattu into it.
- Fill the sattu filling into dough bowl and close slowly to form a uniform ball.
- Take care so that sattu filling should not come out of the dough ball.
- Similarly prepare other sattu filled dough balls.
- Now boil water in a container and once water is boiled put salt and olive oil into it.
- Now put sattu balls into boiled water one by one.
- Once the balls are cooked,they start to float in the water. It takes around 5-7 minutes.
- Grease a plate with olive oil properly and place all the boiled baati into it. Make sure to soak away the excess water from boiled baati before putting them on the plate.
- By cooking the Bati in this manner they soak very less oil when we fry them.
- We can also store these boiled bati balls in fridge and fry them later.
Making Crispy Baati:
- Put the pan on burner and preheat.
- Add olive oil and heat it.
- Now put boiled bati balls into heated oil one by one.
- Stir well and fry on medium flame till they turn golden brown.
- The crisp texture is achieved by frying in this way.
