Ingredients:
- Sem (green beans) – 1 big bowl
- Aaloo (Potato) – 2 medium sized
- Brinjal (Baigan) – 1 big sized
- Tomato – 1 big sized
- Fresh coriander – finely chopped
- Garlic & Green Chilli – finely chopped
- Haldi (Turmeric) Powder
- Cumin (jeera) powder
- Dhaniya (coriander) powder
- Garam masala powder
- Mustard Oil
- Heeng (asafetida)
- Salt
- Methi Dana (Fenugreek Seed)
How to make Sem Baigan Aaloo ki Sabzi (Green beans,brinjal,potato mix vegetable)
- First of all wash all fresh vegetables – Sem,baigan,aaloo and tomato and cut them into medium sized pieces.
- Now put the pan on burner and add mustard oil into it. Heat the oil.
- Add methi dana,heeng,chopped garlic & green chilli in hot oil and stir.Cook until you get a nice aroma.
- Next add sem, baigan and aaloo into the pan and mix well.
- Put salt and haldi powder, mix them in the vegetables.
- Lower down the flame and put the lid of pan for sometime so that the vegetables get cooked properly.
- Open the lid and check if potatoes are completely cooked.
- Now add into the pan, cut tomatoes and mix well.
- Add dhaniya powder, jeera powder and garam masala powder and stir properly all ingredients.
- Put the lid of pan for sometime on low flame and let it cook properly.
- Now remove the lid mix all vegetables well and add fresh chopped (dhaniya) coriander, stir well.
That’s it we are done !!
The colorful and tempting amazing dish is ready to be served.Garnish it with some freshly chopped (dhaniya) coriander leaves and serve.Enjoy it with Chapati/Roti, Parathas, Rice & Dal. It goes well with all !
