Today I bring to you my mom’s Republic Day Special recipe : Palak Paneer & Pulao – Tiranga Platter. A mouth watering, truly delicious and amazing meal for all.

Ingredients :
- Rice – 2 Bowls
- Palak – 1/2 Kg
- Carrots – 5 to 6 – finely chopped
- Paneer – Cut into pieces
- Choti Elaichi, Laung & DalChini
- Cashews (Kaju) – Crushed
- Green Chillies & Garlic – as per taste
- Salt – to taste
- Haldi (Turmeric) Powder
- Dhaniya Powder
- Jeera Powder
- Garam Masala Powder
- Lal Mirch (Red Chilli) Powder
- Orange Food Color
- Heeng
- Water
- Olive Oil
- Desi ghee
How to Make Tiranga Platter :
1. Plain Pulao :
- Take 2 bowls rice and wash properly.
- Soak in water for 30 min and then drain away water.
- Pre heat Pressure cooker on high flame and put 2 teaspoon desi ghee.
- Add Dalchini,Choti Elaichi and laung to heated ghee.Now add crushed Cashews (kaju) to it and stir well.
- Now add rice and mix all ingredients.
- Add 2.5 bowl water and salt to taste.
- Pressure Cook on high flame till 1st whistle and then cook for 2 minutes on low flame.
- Leave the Pressure Cooker to Open by itself.
- Plain Pulao is ready!
2. Palak Paneer :
- Palak Puree : Wash Palak properly and boil them for 1 minute in boiled water. Now transfer Palak to cold water. This helps to retain fresh green color of Palak. Now grind it with green chillies and garlic to make smooth puree.
- Preheat the Pan on high flame and put olive oil into it. Add 1 teaspoon desi ghee to it and heat.
- Now put dalchini, laung, choti elaichi & heeng .
- Add Paneer pieces in the pan and fry by continuous stirring.
- Now add dhaniya powder, garam masala powder, jeera powder, lal mirch (red chilli)powder and a pinch of haldi powder.
- Mix well all spices with paneer and pour Palak puree into the pan.
- Stir well and add salt to taste.
- Put the lid of pan and cook palak paneer on low flame.
- Open the lid after few minutes and cook by stirring on high flame.
- Palak paneer is ready now!
3. Kesariya Pulao :
- Put 1 teaspoon desi ghee in pan and heat it.
- Add laung, dalchini, choti elaichi and chopped carrots into the pan.
- Now add salt, garam masala powder, jeera powder and lal mirch ( red chilli)powder.
- Mix well and fry for sometime.
- Now add a portion of plain Pulao to the pan and stir properly.
- Add orange food color and mix well.
- Bright orange Kesariya Pulao is ready!
Serve hot with Kesariya Pulao (Saffron) on top, Plain Pulao (White) in middle and Palak Paneer (Green) on the bottom. Make centre chakra with laung.
